Creamy Leek Soup Recipe

In today's food section we have delicious leek's cream soup. Because it is winter time you should eat something warm and nourishing. For me leek has become one of must have, I hope u will enjoy this cream soup as much as I do :)


Ingredients:

2 leeks
Butter (1-2 tablespoons)
2 potatoes
7 dl of water
Salt (regular and with herbs)
Pepper
Sweet cream (3 tablespoons)



Serves: 3
Time of preparation: 30 min
Difficulty: super easy



Preparation:

1. We clean the leek and cut it to circles. On 2 tbsp of butter, we slightly cook the leek.





2. Peel the potatoes and cut it into cubes then add them to leek. We mix the two ingredients together and we pour over the water (add so much that it covers the potatoes and leek).

3. We cook it for about 20 minutes (potatoes must be cooked) after it's cooked we take the extra water out.





4. Then we mix the ingredients with a blender and add water if you think the soup is too thick.





5. We put the soup back to the stove and bring it to the boiling point and then take it off. For the final touch, we stir in the sweet cream and we add salt and pepper.




Suggestion: on the soup you can add bread cubes, wich is an easy preparation: cut bread to cubes and then fry it in a pan.


You don't have to use sweet cream but I prefer it because it gives it an additional taste. This soup is easy to make if you don't have that much time.
